It's nice to be reminded of the complexity of the Universe and how small we really are. From the magnificent mountains to the humble honey bee, we are constantly reminded that we really don't understand how the world works and even in the modern world, it's okay to leave room for mystery. 

 

Honestly, catimors are not the best coffees in the world. So, it was a surprise when we cupped Armando and Dublas' harvest this year and the one that stood out to us the most was a catimor. And, that's not to say that the other coffees are bad. They're all quite good.  

 

When we told Armando how we really liked this particular coffee, he smiled and said, "oh, that's because I put the beehive in that part of the farm". Simple enough of an explanation. In a cerebral way, I understand that a coffee cherry should express the flavors determined by its genetics. I've also lived long enough and have met enough people that talk about terroir or simply that the coffee tastes citrucy because it's in an orchard of lemon trees to realize that the world is more complex than genes simply expressing themselves. 

 

Here's to polyculture, here's to cross-fertilization, here's to biodiversity and here's the the humble honey bee making coffee taste great!
